The omnivore’s delight! Locally raised 100% grass-fed beef and lamb.
Quite simply grass- fed beef is leaner, more flavorful and contains higher levels of beneficial nutrients than grain fed animals. Our beef is dry aged 14 days or more, the lamb 7days; this reduces the water weight in the meat and gives the naturally occurring enzymes time to tenderize the meat. A combination of these enzyme levels seem to be heritable, and are part of the DNA analysis for tenderness. Much research is available now defining the differences and benefits of grass-fed meat. We are pleased many of our customers are well informed and supportive of local, sustainable, healthy for land and man meats. Only grass-fed beef is high in the nutrients beta carotene, vitamin E, with well balanced omega 3 and 6 fatty acids. Both grass-fed lamb and beef are also a great source of conjugated linoleic acid (CLA) Even if beef and lamb are labeled natural or organic it may be grain fed. Our meat is quick frozen and available most of the year. It is best to arrange for your favorite or special cuts by ordering ahead for pick up at one of the farmers markets.
